How to make Gong Bao Chicken

Gong Bao Chicken, probably one of the best known Chinese dishes in the west. It is a spicy, stir-fried dish made with chicken cubes, peanuts, vegetables, and chili peppers. This classic dish of Sichuan cuisine -well known for its spiciness- contains loads of Sichuan peppercorns. Although the dish is found throughout China, there are regional variations that are typically less spicy than the Sichuan serving. Anecdote also goes around that this dish was invented by Ding Baozhen, a governor of Sichuan Province during the reign of Emperor Guangxu (1871-1908 AD) of the Qing Dynasty.
